Vegan cabbage salad

Wouldn’t it be amazing to come home to a creamy vegan cabbage salad with sprouts, nut, berries, and seeds? This is exactly what I came home to last night. My son Griffin is 17 years old and surprised me with an amazing meal last night. I was feeling drained and tired.

My boys were homeschooled and are used to eating healthy plant-based foods. No tuck shop with sweets and other junk foods 🙂 Their tuck shop was nuts, fruits, berries, popcorn and healthy baked goodies. So it was no effort and not unfamiliar to Griffin to create such a delicious light meal.

Ingredients:

Cabbage
Carrots
Sunflower seeds
Cranberries or raisins
Cashews
Chopped walnuts
Sunflower sprouts
Apples

Method:

  • Grate the cabbage, apples, and carrots
  • Add the rest of the ingredients
  • Blend a cup of raw unsalted cashews to a cup of water in a high-speed blender. Add a 1/4 cup of cold pressed olive oil, 1/4 teaspoon of mustard seeds, a teaspoon of raw honey, garlic and herb salt. Mix into the cabbage salad.

Make a big batch and enjoy lunch for a few days.
