Warming fluffy vegan pancakes

Nothing is better than indulging in sweet, creamy, fluffy pancakes for breakfast. It’s dessert for breakfast 🙂 It is a tradition in our family to indulge one morning on a public holiday. So this is what I made. 

Vegan pancakes using spelt flour. If you are unfamiliar with spelt flour please read about it here.

Ingredients for 4 servings:

  • 1.5 cups of wholemeal spelt flour
  • Pinch of salt
  • 1/2 tsp of cinnamon powder
  • 2 tsp of baking powder
  • 2 spoons of fructose
  • 1 cup of plant milk
  • Coconut sugar and cinnamon with a pinch of nutmeg for topping
  • Lemon juice
  • Coconut oil for frying
  • Berries or other fruit
  • Mix of chopped nuts & seeds
  • Coconut cream

Method:

  • Mix all your ingredients in a food processor or blender. Let it sit for a few minutes
  • Prepare a pot with boiled water and a plate so you can stack your pancakes as you make them to keep them warm
  • Add a dollop of coconut oil to a non-stick pan, when it is hot add a spoon of your mixture at a time. When bubbles start to form, turn over until it is cooked
  • Serve warm. Add your toppings and a swirl of coconut cream
  • Yummy
